De IFCONFIG(8):

     media type
             If the driver supports the media selection system, set the media
             type of the interface to type.
...
     mediaopt opts
             If the driver supports the media selection system, set the speci‐
             fied media options on the interface.

Então:

ifconfig em0 media 100baseTX mediaopt full-duplex
